Easy-Peasy Loaded Baked Potato Soup recipe
Ingredients:
7-8 large russet potatoes (peeled)
7-8 large russet potatoes (peeled)
4 cups chicken broth
1 medium yellow onion
2 tablespoons butter
2 cups milk
16 ounces Velveeta
1 packet ranch dressing mix
1 can cream of mushroom soup
Salt to taste
+ Toppings: sour cream, chives, bacon, cheese, etc.
In a large stock pot, bring the following to a boil until the potatoes are tender:
7-8 large russet potatoes (peeled)
4 cups chicken broth
1 medium yellow onion
2 tablespoons butter
*You can also Pressure Cook these ingredients for 12 minutes to create tender potatoes.
Mash up the potato mixture with a wooden spoon, then stir in the following:
2 cups milk
16 ounces Velveeta
1 packet ranch dressing mix
1 can cream of mushroom soup
Salt to taste
Lastly, serve and add your favorite toppings! My favorites are sour cream, chives, bacon, cheese, and hot sauce. Mmmh!
Notes: If you find the soup to be too thick, just add extra milk until at preferred consistency.
